These carrots are one of my favorite things to pair with grilled chicken, but they are also a great snack just by themselves. Not to mention, they're super simple to make.
- 1 bag whole carrots
- 3-4 tbs honey
- 2 tbs warm water
- 1/2 tbs chili powder
Peel your carrots and cut each one in half. Then slice them length-wise down the middle, and then again if they still seem too thick. Place slices in a bowl.
Mix the honey, water, and chili powder. Pour the mixture over the carrots and let them set for about 30 minutes. This will soften them up and shorten the overall cooking time.
Now, there are three ways you could go about cooking these carrots:
- Grill - You could wrap up the carrots (with the excess honey mixture) in foil and cook them on the grill for about 15 or 20 minutes. I suggest doubling up on the foil in case the bottom layer doesn't hold. Basically, you cook the carrots until all the water has evaporated and there is no more liquid in the foil. Grilling gives the carrots a sweet, spicy and smoky flavor that I love, so this is my first choice.
- Bake - You could lay a piece of foil down on a cookie sheet (maybe spray some oil on top), load it up with the carrot mixture, and bake for about 20 minutes or until the liquid has cooked out.
- Pan Fry - You could cook the carrot mixture either in a skillet or in a sauce pan until the liquid has cooked out. Be sure to add oil or butter if you don't have non-stick pots and pans.
